Traveller rpg.com is canon source?
Probably every Traveller group that ever played invented a new species (not race). Any system with a barely-breathable Oxygen atmosphere is likely to have a species at some form of TL above 1. But documented?

Is there even a canon source for how many languages are in use in the 3I?

I never considered more than two dozen.

Canon can't even agree on how jump fuel is used. And you want a language count?

I've always assumed a huge number of separate languages, with an even larger number of dialects. Travellerrpg.com lists 321 known races. If you assume that each of these races has evolved roughly the same number of native languages as real world Terra has (~6,500 according to google), that makes for one heck of a high number of languages . . .
