We've had numerous requests for our Cowboy Caviar
recipe that we brought to the holiday party. So here it is! 2 cups cooked black beans 1/2 cup chopped green olives 1/4 cup finely chopped onions 3 cloves finely chopped garlic 2 T vegetable oil 3 T lime juice 1/2 t salt 1/2 t crushed red pepper flakes 2 t ground cumin 1/2 t black pepper 1 (8 oz) pkg cream cheese 2 hard-cooked eggs, peeled and chopped 2 green onions, chopped 1/4 cup diced red pepper Mix all ingredients except cream cheese, eggs, green onions and red pepper. Cover and refrigerate at least 2 hours. Spread cream cheese on serving plate. Spoon bean mixture evenly over cream cheese. Arrange egg on bean mixture. Sprinkle with green onion and red pepper. Serve with tortilla chips. Enjoy! Doug and Leslie
