If you are looking for guided / supported inn to inn tours, I might suggest Experience Plus.  I have known Rick for many a year in the industry and they run great trips all over Europe.  Options range from easy (101 trips) to rather challenging (401 & Expeditions). - www.experienceplus.com

For guided / supported camping tours, check out Biking Les Alps for low key, but rather challenging rides in the Alps, Dolomites & Pyrenees - www.bikinglesalps.com

If you want more independence, but still have logistics organized, try Randonnee Tours.  They have been doing self-guided European trips for many years, you get nice hotels, your bags transported between hotels and route suggestions to get from A to B, but no schedule and no guide pushing you along. - www.randonneetours.com

And when you are ready to go somewhere other than Europe, check us out (www.PedalersPubandGrille.com).  For what you will pay for a bike tour in Europe, you can get a bike tour in Thailand & the airfare from Gainesville to Bangkok and still have some money leftover.
