You may want to consider using generative AI as an activity for some of the students. For those using AAC, they can generate some words that an assistant can put into a prompt. For those who are verbal but have difficulty with writing, they can explain what type of art they want, and that could be put into a generative AI such as ChatGPT or Gemini depending on which your IT department supports.

I’ve had some of the students I work with create amazingly inventive art, particularly when they are encouraged to iterate.
